enchilada casserole – yummy!

Can’t take credit for this; it’s Heather’s recipe. Sure is tasty, though!

1 package of small tortillas
1 can (8-14oz) of red enchilada sauce
1 small can of diced green chiles
1 can (8oz) cream of mushroom soup (sounds weird but it’s right)
1 lb. (or slightly more) of hamburger
1 bag of shredded cheese
Diced onion (optional if you like onions)

Baking dish (9” x 11” or similar size)

Sautee hamburger in a skillet (with onions if using) until cooked
Preheat oven to 375°
Line baking dish with layer of tortillas
Once hamburger is cooked add enchilada sauce, chiles, and soup. Let simmer for several minutes and stir often to mix ingredients together.
Pour a layer of the hamburger mixture over the tortillas then sprinkle cheese and repeat (tortillas, mixture, cheese). Bake in the oven for 15-20 minutes until it’s warm all the way through and the cheese is bubbling.
