Do I have your attention now?
When I made this for Heather’s birthday, I knew I’d have to make it again. And again and again. It was just so good. And pretty easy, too. I tweaked a Paula Dean recipe I found on Food Network’s web site.
Mix 1.5 cups of flour, 1 cup of powdered sugar, and 1.5 sticks of softened butter (no one said it was healthy) in a bowl with a fork until it comes together in a ball. Press the dough out flat on a CLEAN pizza pan. Cook at 350 for 15 minutes until browning. Set it aside or in the fridge to cool.
Mix 8oz cream cheese, 0.5 cups regular sugar, and 1 tsp of vanilla in a bowl.
Cook a little squeezy bottle of lime juice, a T of cornstarch, and about 4 heaping T of regular sugar together on medium heat until it thickens. Stir constantly. Set aside to cool.
When your crust is cool-ish, start frosting it like a cake.
Cover with fruit. Spend as much or as little time arranging the fruit as you want, depending on how much time you have or if you’re feeling artistic. Or want to impress people. Or are pretending you’re on Food Network.
Note: the first time I made this, I used only raspberries. It bore a great resemblance to a pepperoni pizza. Would have used raspberries again (the combo with the lime glaze was divine) but strawberries and blackberries were both on sale.
Drizzle the lime glaze over the top. In my opinion, this is what makes it all so yummy – the contrast between tart and sweet. You won’t use all the glaze. Toss a little bit with some leftover fruit for a tasty treat. Or save for your next tart! You WILL make this again.
Keep refrigerated until ready to serve. Or snap pictures to post to your blog because you feel like a domestic goddess.
I’ll bet this would be awesome topped with whipped cream…
